Roll 2 pounds sausage out flat on waxed paper and sprinkle lightly with old bay seasoning.
take 2 pounds of crab meat and 2 12 oz packages of 5 italian blend cheese and mix together addind 2 tablespoons old bay seasoning. Place mixture in the middle of the sausage and then wrap the sausage around it sealing the seams and ends.
put fatty on a seafood rack and smoke at 225 for about 1 1/2 hours or until temp is at least 160 in the middle of the fatty.
Let sit about 10 minutes and then it will slice like a meatloaf.
Man is it good eating.

Last year I cooked them every competition. This year I am doing a crab imperial baked potato with cheese.
The judges don't like them but I sure have a lot of friends that stop by for samples.

Lobster tail wrapped in bacon with some rub and a little bbq sauce just might work at least I will have more friends

I'd eat some of that, but around here, 2 pounds of crab meat costs almost as much as my Stump's Tailgater did, so I doubt that I'll be making it anytime soon. :cry:

What is a seafood rack??? Got a picture?

Only do 1 pound of sausage, 1 pound crab ,1 bag of cheese and it still is good. I started out doing it this way,then went overboard. I have a few friends that crab for a living.You be supprised what a few racks of ribs will get you in crab meat.
I am going to have to think about the oysters but give me a few weeks and I will come up with something. I will try darn near any thing once.
