Have 2 racks of beautiful spares for this weekend. Going to dust with Stumps Classic and smoke with hickory and peach. I do have 2 questions:

1. Not going to foil this time. Any idea how long at 250?

2. Do you guys keep the flat on the top?

Also going to do some lamb following Busters recipe. Gonna be fat and happy tomorrow.

Then we are gonna cool the smoker down and do peppers and tomatos...

Of course, there will be pics.

Bill,
I would think atleast 5 hours, maybe six. Depends on how thick they are. Keep a check on the bottom of the ribs(bone side). If they start getting dark I would rotate them some. The right hand side on my baby is a bit hotter.

By flat, do you mean the strip of meat that runs across the top side of the ribs? If so, yes I leave it on. All I do is peel the membrane, scrape some of the fat off the bones, St louis them, rub and cook.

Hope everyone is having s Smokin' weekend and can't wait to see the results. Buster-hope you get a little down time soon-but I know them butts you're cooking are gonna be a big sucess-might ease the pain just a little bit :lol: :lol:

Ribs are on now. Getting ready to rotate at the halfway point. Peppers are ready. Just need to slice the tomoatos before they go in...

Ribs smell great. Peach wood is the best thing I ever discovered...

I am all done for now.. the pork was a success, put it on last night got up and pulled it for the client and got it delivered... It is about to rain here in Middle GA so I probably will not cook anything tonight but if it blows on through quickly, I may cook some chicken..

Did the spares and lamb yesterday.

Dusted the spares with Stumps Classic. Cooked at 250 for 6 hours. Glazed one with applebutter bbq sauce and one was with rub only. Should have glazed at 4:30 and pulled at 5 hours, but friend was late. Not much I could do. Bit dry on the edges, but otherwise good.

Marinaded lamb ribs and leg in Stubbs Beef Marinade overnight. Pulled and dusted both with Stumps Classic. Wrapped the leg in bacon. Pulled the spares and raised the Baby to 350. Cooked the ribs for 30 minutes and the leg until 160 internal. The ribs were perfect and the leg was just past perfect medium. Mouthwatering good. Best non-curried lamb I have ever had.
