It's 3:40 AM and I've just finished seasoning a brisket and a beef roast. Did the TX BBQ on the brisket. Worchestershire sauce & TX BBQ rub. The beef roast I did differently until I know what the family's taste buds are like. Sprinkled butter flavored grapeseed oil, cumin, garlic powder, onion powder then brown sugar over that. My battery was dead when I tried to take pictures but it's on charge now and I hope it's charged enough to get some pictures before I put the food in to cook.

Managed to wake the dogs who proceeded to wake the wife who didn't seem bothered at all. Waiting for Marty to get up to temp and if my battery isn't charged enough I'll have to bother the wife for her camera.

By the way I'm cooking the beef today so I can cook the chicken tomorrow. Gonna half a chicken and do melted butter withEverglades seasoning on one side and Stump's Platinum on the other side. I'm also marinading some chicken thighs in Newman's Italian dressing then doing some Everglades seasoning on them. Thanks Mike!

Keep you posted on the progress. With pictures, I hope. I know! No pictures, it didn't happen! LOL!

By the way, it's 17* with wind chill near 0 and an hour and 45 minutes after I lit a starting cube, Baby is up to 200*.

That is freakin' cold. It's 72 here in Louisiana but the forcast is for colder weather in a day or two.
My first cook on my baby will be a chuckie, chicken and possibly a brisket. Hopefully next weekend.

Ray I thought you said you are retired, Dang 3:40 AM, what happen to sleeping in. If I see the the temp says anything below 65 I'm going back to bed :lol: :lol: :lol:

Good news/bad news on my camera. Good news is the battery is fine. Bad news is the flash is shot. Have the wife's camera as a backup. Here's a couple pictures of the brisket and beef roast. They were in for a short time before I took the pictures..
