Hello Stump Nation,

I am impatiently awaiting my first Stump Smoker (The XL Baby.) I have been researching the best charcoal and wood to use in my new smoker. What I have found is Stubbs briquettes is a good charcoal option and Fruita is a great choice for wood. (Please correct me if I am mistaken.)

My question is what size wood from Fruita should I order: Chunks, 5 1/2" Mini-Splits, or 12" Splits. I am guessing chunks, but wanted to make sure before I send off my order. Thanks in advance and I'm sure I will have a lot more questions in the future.

Jonathan

First welcome to the site. Congratulations on your order of a XL Baby, you will love it. Feel free to ask away with questions, now is a good time while waiting for your delivery.

For an XL Baby, most wood will be going into the ash pan for smoke. A 12" split may be a little oversize for your ash pan? If any wood used in the chute, smaller sized pieces are required to prevent bridging. The couple of cooks I did use wood in the chute, I cut it into a little larger than golf ball size.

I personally use chunks for all cooks in my Stretch. I can control the amount of smoke by using one or several chunks during a cook. I also find it easier to add combinations of wood by using the smaller chunks.

Some members here love the splits or mini splits also. Guess it comes to a personal preference.

I can tell you what Stump uses...Chunks from Baxter's Original http://www.baxtersoriginal.com/ put in the ash pan. The charcoal is a commercial restaurant quality lump charcoal produced by Royal Oak.

The chunks are about the size of the palm of my hand, maybe a little smaller.

When I was using a gravity feed (Elite 6), I would use chunks in the ash pan. I usually used chunks that ranged in size from fist to softball.

If you had come by the contest when Cookin' With Stump was in Jacksonville, you could have seen the boxes with the flavors and the brand printed on them. ;)  And seen the sizes, too. ;)
