I want to attempt an overnight cold smoke, is there any reason I can't or shouldn't put wood chips or small wood chunks in the chute mixed in with the charcoal?

Thanks

I have cold smoked a number of times and I find that it is necessary to put chunks of wood in the chute to get the smoke needed. Stumps is so well insulated that there just is not enough coals dropping to smoke the wood in the tray. In fact, the wood I put in the tray just gets buried in ash and doesn't light. But putting wood in the chute works fantastically well. I have the XL Stretch so my chute is quite large, but I put half fist to fist size chunks of wood, three chunks to every 8-12" inches of Royal Oak lump in the chute... (very imprecise) .. so I pour some Royal Oak in, three chunks, pour more, three chunks. Then I light it with the plumbers torch, throttle back the valve so its 20% open, and do the same with the guru. Works GREAT.

I like to smoke my summer sausages at 120' or so for 8 hours and then I crank it to 180 or 200' and as soon as it hits 150' I pull it.

Hope that helps. Somewhere here I have a post with pics of it all if you are interested.

GO STUMPS!
