After seeing everyone's posts of their cooks, Luke and I decided we should do a cool also. He wanted ribs and I wanted brisket, but with the price of briskets I went with a chuck roast instead.

The funny thing is I started probing it at 195. I was in and out every 5 degrees. The last time I went out I looked at the guru and it was 20 degrees lower. I could hear the fan so I knew the Guru was working. I instantly thought bridge. So I opened the shoot and gave the charcoal a tap and nothing. I thought what the heck and I looked down. I had closed the ball valve while I had the door open to check the meat and forgot it and left it closed. Lessoned learned.
