Looking great from here. Did you wrap it during the cook? I started putting mine in an aluminum pan and don't cover during the entire cook, they just fall apart when done. All the juice is also just sitting in pan

and sorry Mark, the wife found the butt in the deep freeze and said I was smoking it. So I smoked it. :lol:

Looks great, wonderful job. I used to cook the boneless ones all the time, and they always cam out great. But I have switched to bone-in now for the flavor, not having to tie them is a bonus. In fact just firing up my Classic as I'm typing this, to put it a couple in shortly.

It's a nice change of pace cueing "normal stuff" rather than what I cook regularly
My nephew is after me to smoke another pastrami for him, so that's next.
