It has been awhile since I posted anything. I decided to try my hand at some snack sticks. After some good advice from Mark and Kevin I went for it. I did 5 pounds of sticks in 21mm casings. It sounded like a lot, but after stuffing the casings it wasn't. The top two are short videos and the third is a picture.

That's was awesome! I loved the video. Those snack sticks look really good, are they spicy? I'd love to have that stack of sticks here with me right now.

Looking good Eric. Nice to do small batches to get flavors figured out and cooking times. But yes, 5 lbs will be gone in no time.

I'm happy I ventured into the sausage making end of smoking. Sure opens up an entire new food to work with. I sent up a small sample to our company work location in the Twin Cities. My small sample, turned into over 35 pounds of orders. Busy weekend ahead.

I used the hi mountain snack stick kit. Came with seasoning, cure and casings.

Those look excellent! What time/temp did you end up going with? Did you rest overnight before you smoked after you stuffed? Did you like the LEM 5lber?

I ended up going at 180 degrees with some red oak for smoke. My son Luke helped me stuff them and then into the fridge overnight. A little learning curve on those casings. I over stuffed twice. Lol. I love the stuffer. It made it real easy. I appreciate the advice you gave me. Thank you.
