Here is a few pictures of a pork belly I did 4 weeks ago. I split the belly in quarters and did each one different.

1. A bbq rub and Oakridge Crucible rub.

2. A bbq rub and Tiger Sauce

3. A bbq rub and Dizzy's rub

4. Salt and Pepper.

They all tasted great, but I liked #1 the best.

I ran my smoker at 275 degrees. I did not wrap them and I let them go till right around 205 degrees. I read some where that would render the fat out at that temp. They where so good. I took some into work and the guys ate it up in hot minute.

I've only made bacon. I'm going to have to try cooking them like you did.

They look great, I'm going to throw one on this weekend. It looks like you scored them, and if you did was it the fat side you scored? About how long did they take, and which side up?

Thank You

I scored them and cooked them fat side up. I think it took five hours.

I forgot. I also threw a flat on and I was all over that. I need to take better shots.
