4-6 lb Bone in turkey breasts from Central Market
Brine over night in Turkey bag iced down in ice chest.
Brine mix;
2 Gal Water
2 Cups Kosher Salt
1/4 cup Liquid Crab Boil
4 Tbs Black Pepper
1 Tbs Thyme
1/4 Cup White Wine
1/4 Cup Worcestershire

Remove from brine and pat dry
Rubbed with Angelo's Pork/Poultry rub
On Stretch at 230 degrees, Apple wood for smoke.
Cooked to 163 degrees
Remove from smoker and put in 400 degree oven for 20 minutes to crisp skin
Remove from oven and wrap in double foil and put in ice chest for at least one hour.
Remove and slice.

Turkey was very moist and the rub was just right. This rub isn't sweet and has a little bite.

Also threw on a package of Slovacek's Jalapeño Hot sausages for 1 hour. These things are SO good!!

Mmmmmmm looks great. Those sausage would go good with some eggs and tators right about now.

Looking really good. I need to keep my eye open for some turkey on sale...

If you cook those at 350, you'll crisp the skin and stay moist at the same time...
