 Post subject: jalapeno and cream cheese experimentation time

I'm making some pig candy tomorrow. My idea is to make a mixture of diced pig candy and cream cheese. I would stuff that into a jalapeno and cap it with a lil smokie. Then I'll dip it in egg, roll it in a flour/spice mix and fry that bad boy.

I might even wrap it in another piece of bacon before I egg it and fry it, to get two bacon tastes.

Thoughts?

Interesting. Can't wait to see how it turns out.

Perhaps a hot pepper jelly dipping sauce?

Yeah, we were trying to figure out what to dip it in. I had thought about raspberry jam, maybe adding some chipotle to it somehow.

I would just eat them like that. Then again a chipotle ranch dip souds pretty good as well. Either way, those sound awesome. Send some my way when they're ready.

I realize I said "tomorrow", but I meant Sunday. :lol:

I'm heading back now to get my ribs happy. I shop at a local joint called the Cajun Meat Company in Marietta. Chad (the owner) has a pretty good rub, so I had him it put it on one slab, and I'm doing another two with my regular Stumps rubs.

Still waiting to do these. We ate a late lunch (pics: http://stumpssmokersforum.com/viewtopic.php?f=31&t=5204) and even though I have the pig candy, I burninated my bacon wrapped smokies. A few were salvaged, but most were carbonized.
