Guy at work gave me some elk meat. Anyone have any ideas? I appreciate the help.

Do it like deer. An easy way is to stud the roast with garlic, then marinade in cheap red wine, garlic, onion, and rosemary. Maybe a bit of thyme. Add some oil to your marinade. Let marinade for at least 24 hours. Then, remove, season with salt and pepper, roast on a bed of carrots, potatoes, and onion.

I am sure someone has a better recipe though...

If the meat is a tenderloin I would slice, season and grill. If it is some kind of roast be careful it will be very lean and could dry out.
