My family will pretty much never eat a steak off the grill after trying these off the Stump. Best to check temps as you go to reach desired doneness. Super easy and delicious.

This is how I prepared and cooked. I also like them seasoned at least an hour prior and set at room temp an hour before cooking. Seasoning is your choice, basic salt and pepper work real fine also.

Notes from a steak cook:

Sirloin Steaks
Mothers Day 2012

Temp 350
Oak Wood
Center rack
Steak seasoned with Montreal Steak Seasoning
On at 12:30pm
20 to 25 minutes all at medium temp. 145
Very good

Thanks, I appreciate the recipe. Stump has a video on you tube, but it was not very informative.

I think it has to do more with the moisture kept inside the Stumps and not drying out the meat, rather than any top secrete rubs or seasonings.

Oh and allow to rest prior to serving, keeps the juices from escaping.

Mark. Do you get color on the steak? Do you turn over steaks half way through?

Thanks

Eric

Color for me isn't as deep as off a grill, and yes I do try to flip them once during the cook.

You will not believe how juicy they turn out. I have placed them on the bottom grate for a little bit hotter temps.

From one of my steak cooks.

I have been trying to get Stump's steak recipe for years and it's a no-go. ;) ;) I've eaten them a couple times.

He says you just cook it to your own personal taste and doneness. Season it your own way and cook it 'til it's done to your liking. ;)

Mark's pretty much got it covered. Bottom rack on the gravity chute side is the hottest.
I used to demand a sear to get that Maillard reaction, but Stump Steaks pretty much compensate in other ways.
