Hi everyone , I'm a new owner of a baby xl really excited , just did a over night cook with brisket was amazing , but for some reason when I tried ribs and chicken , they were lacking smoke flavor and the seasoning didn't really penatrate the meat , obviously I'm doing something wrong I'm a prior owner of WSM , usually cook chicken and ribs on 275 please advise thanks

I use smaller chunks of wood starting out and then add a few bigger ones once they get rolling good. That has helped with the smoke for me. Are you using any kind poer draft system?

I am cookin on a baby right now and haven't seen that problem,i season my ribs and chicken and let the seasoning melt in before I pit on the cooker,im cookin at 268*practice,practice,practice youll get it and don't think twice about asking questions

If you like heavy smoke, put some small pieces of wood in the chute. That helps.
