i think phil collins sang that?

tonight i will be doing a rib practice for the upcoming BBQ comp out in fernandina (rib only). first time throwing some ribs on the stumps. second time COOKING on the stumps. not worried about a thing. gonna get that temp where i wanna cook at, then cook with my eyes, ya dig?

obviously for the comp i am going to be VERY aware of a timeline, but for practice i'll just be getting a better idea of what the timeline will be. at the comp i will give myself PLENTY of time.

cooking by eye, for feel

lump in the chute and still working out what to throw in flavor box (or whatever it is called). on my lang, i liked a combo of lump and pecan. my stumps is VERY new to me so i will be testing which wood works the best.

hope that helps!!!
